I like having quick JIT (Just In Time) dessert recipes that you can make last minute or in advance. This vanilla chia seed pudding is so very easy to make. It takes hardly any time to prepare and sets within minutes! Don't get me wrong, there is a time and place for cheesecake, but occasionally there is also a place for quick and not fancy.
