When I first started a keto diet, I wondered how many of the things I enjoyed would no longer be available. I was suprised to learn that many alcohols are extremely low in carbs. It is typically the 'mixers' that add all the calories and carbs. Lemon juice is also low in carbs...provided that you use an unsweetened juice.

I love the contrast of the bitter sweet of a Tom Collins. You can substitute the sweetener to your favorite, and add more or less to adjust to your liking. It is extremely customizable!

Add ice, either from the shaker or separately, if you prefer ice in your drinks. It is so refreshing on a hot summer day.

I have modified this recipe since I originally published it. I reduced the amount of lemon juice (from 3/4 cup), but kept everything else the same. This resulted in a much sweeter tasting drink as there is less bitterness from the lemon juice. Of course, if you like your drink more tart, keep the lemon juice the same as before. As always, you can alter the strength of your drink by changing the amount of club soda that you add.

  1. Add ice to cocktail shaker.
  2. Add sweetener, gin, and lemon juice to the shaker and mix.
  3. Split drink between 2 cocktail glasses and top each with 5oz of club soda.
