Prepare the 'Outside'

Preheat the oven to 350F.

Line a 1/4 baking sheet (approximately 9"x13") with parchment paper and set aside. I use a Circulon baking sheet that is not quite a 1/4 sheet and is 10"x15".

Slice the zucchinis into thin slices and toss with salt in a bowl. This will allow some of the water to extract from them and soften.

Arrange the sliced zucchini to cover the baking sheet, allowing them to touch as necessary. Set aside for 10 minutes.

In a mixing bowl, whisk together eggs, salt, pepper and nutmeg.

Pour the egg mixture over the zucchinis. Tilt the pan as necessary to get the eggs to cover edge to edge of the pan creating an egg 'sheet'.

Bake at 350F for 15 minutes. Afterwards, remove it from the oven and begin cooling while you are preparing the beef stuffing.
Prepare the 'Stuffing'

While the eggs and zucchini are baking, cook the ground beef in a little bit of olive oil. Once the beef is cooked, add onion, garlic, tomato paste, ketchup, rosemary, salt and pepper. Allow the beef mixture to simmer for about 10 mintues over low heat and stir regularly.
Put together the 'Taco'

Cover the cooked zucchini and egg with cheddar cheese, then spread the ground beef on top.

Using the parchment paper, roll everything up into a log shape and place back onto the baking sheet. Top with a little more cheddar cheese.

Bake at 350F for an additional 15 minutes. Here is what it will look like when it's done:
Tips for Success
Optimize your time by starting to brown the beef once the eggs and zucchini are in the oven.
Use jalapeno ketchup in place of regular ketchup for a spicy taco!
