Making soup without all of the preservatives found in canned and packaged soups is not at all difficult! Simple ingredients are the best, in my opinion. This recipe contains 3 main ingredients and the rest are all basic spices and cooking ingredients.

This cauliflower soup is so easy to make and does't require any fancy tools. You can even subsitute all of the cauliflower with a bag of riced cauliflower for a smoother texture. I personally prefer a thicker and chunkier style soup, which is why I do a mixture of riced cauliflower that I puree in a food processor and the other half coarsely chopped into bite sized pieces. If you like thinner soups, just add more broth or use an emersion blender to puree everything together smoothly.

Chop your head of cauliflower into halves. With one half, puree in your food processor and set aside. With the other half, chop into bite size pieces.

In a sauce pot, saute the bite sized cauliflower in the avocado oil and garlic for about 3 minutes, or until not quite cooked.

Add the broth and pureed cauliflower.

Add the heavy cream and spices and let simmer for a few minutes.

Add the cheddar cheese and stir until melted.

Garnish with thyme and parsley. Add salt and pepper if desired.
